Meals on the Run

Some of my most difficult times when it comes to eating gluten-free is when I'm in need of a quick and easy meal. It's easy enough to pop a pizza in the oven for the family, but what about me? Normally, I wouldn't care to be left out. But a girl has to eat. And if I'm going to go through the trouble to make myself a home cooked meal, well let's just say the family isn't getting pizza.

I was thrilled (yes, we Celiacers get thrilled when we come across a new edible gluten-free product) when I came across this article - http://celiac-disease.com/gluten-free-smart-ones/. At least now I have choices. And I don't have to look through the health food section, if the grocery even has one.

The ones highlighted in blue are the ones I've tried. I'll have to try a different grocery store to find the others. When I try them I'll let you know. The down side to eating frozen entrees is the high sodium and high carbs. The Lemon Herb Chicken Piccata has 540mg sodium and 41g of carbs! Not something that I'd want to eat every day, but for those times when I need something on the run it'll do.

Broccoli and Cheddar Potatoes- not bad. Not real filling, but the taste isn't horrible, but then I'm not one for nacho type cheese.


Lemon Herb Chicken Piccata- this one is tasty. I couldn't live on it day after day, but it's a nice change.

Santa Fe Rice and Beans- This was a favorite of mine before I discovered I had Celiac. It still is.
