Pesto Chicken

For months, we've been eating the same old same old. Tacos, burritos (mine without the tortilla), hamburgers, pizza (me, I get a gluten free microwaveable). When there is no variety in the menu it gets kind of boring. A few weeks ago, I decided to make a gluten-free stir fry. It was a hit with everyone, BUT dh. And since he's the bread winner of the family, I aim to please.

Today, I'm trying something new. Pesto Chicken. We'll see how it works out.

This is what I've done so far:

Layer four boneless skinless chicken breasts in the bottom of the crock pot. Cover with a layer of pesto and a layer of mozzarella cheese. Add another layer of chicken, repeat with pesto and mozzarella. I've set the time on high for six hours. Hopefully it will be done.

I intend on serving it on top of Jasmine Rice. I might even add a bit of tomato for flavor.

Meals on the Run

Some of my most difficult times when it comes to eating gluten-free is when I'm in need of a quick and easy meal. It's easy enough to pop a pizza in the oven for the family, but what about me? Normally, I wouldn't care to be left out. But a girl has to eat. And if I'm going to go through the trouble to make myself a home cooked meal, well let's just say the family isn't getting pizza.

I was thrilled (yes, we Celiacers get thrilled when we come across a new edible gluten-free product) when I came across this article - http://celiac-disease.com/gluten-free-smart-ones/. At least now I have choices. And I don't have to look through the health food section, if the grocery even has one.

The ones highlighted in blue are the ones I've tried. I'll have to try a different grocery store to find the others. When I try them I'll let you know. The down side to eating frozen entrees is the high sodium and high carbs. The Lemon Herb Chicken Piccata has 540mg sodium and 41g of carbs! Not something that I'd want to eat every day, but for those times when I need something on the run it'll do.

Broccoli and Cheddar Potatoes- not bad. Not real filling, but the taste isn't horrible, but then I'm not one for nacho type cheese.


Lemon Herb Chicken Piccata- this one is tasty. I couldn't live on it day after day, but it's a nice change.

Santa Fe Rice and Beans- This was a favorite of mine before I discovered I had Celiac. It still is.

Quality of Life

Whenever people hear that I'm Celiac they often respond by saying, "You've got more self-control than me. I could never do that."

To me it's not a matter of self-control but the quality of life. And since I've been on this gluten-free journey my quality of life has improved ten-fold if not more so.

Yes, I still have the occasional bout of illness that I know is related to gluten. When that occurs I have to investigate. I have to discover what the culprit is. And it's not always food related. Once, and I have no doubt, I became ill from wearing eyeliner. No, it wasn't in my head. It was definitely the eyeliner. And although I can't remember the brand I do recall looking it up at the time and discovering that yes, it did contain gluten.

When you have Celiac, living a gluten free life is not a game. It can be the difference between life and possibly death.
